Melanzani - Bulgur Falafel with Tahina and Jalapeño Salsa

Ingredients

For the Falafel:
  • 4 melanzani
  • 135 gram Kashkaval cheese
  • 135 gram sheep's cheese
  • 35 gram finely chopped parsley
  • 35 gram finely chopped coriander
  • 7 gram red chilli
  • 3 gram ground cumin
  • 9 gram salt
  • 2 tbsp cornstarch (maizena)
  • 250 gram bulgur

For the Tahina:
  • 110 ml water
  • 1 tbsp lemon juice
  • 140 gram pure Tahina
  • 1/2 tsp sea salt

For the Jalapeño Salsa:
  • 25 gram finely diced green chilli
  • 25 gram finely diced pickled jalapeno
  • 15 gram finely diced peeled garlic
  • 50 gram olive oil
  • 50 gram lemon juice
